LEMON BLUEBERRY CUPCAKES

The combination of blueberries and lemons was just meant to be. This blueberry-studded, lemon-infused cupcake is topped with a tangy cream cheese frosting and is bright, refreshing, and delicious. These Lemon Blueberry Cupcakes are so tempting you may find it hard to resist them.

LEMON BLUEBERRY CUPCAKES

3 cups cake flour plus extra for coating the blueberries2 teaspoons of baking powder
Half a teaspoon of salt
8 ounces of unsalted butter at room temperature
2 cups sugar
Four eggs
Vanilla extract two teaspoons
Zest of 1 organic Lemon
1 cup whole milk
1 1/2 cups blueberries

Preheat oven to 350. Cupcake wrappers can be used to line muffin tins. This recipe yields 30 cupcakes.

Mix the flour, baking powder, and salt. Set aside.

Toss the blueberries gently in a bit of flour. Set aside.

Beat butter and sugar in an electric stand mixer bowl on medium-high using the paddle attachment. Beat for about 4 minutes until pale and fluffy.

Add eggs one by one while the mixer is on low. After each egg, mix well.

Add vanilla extract and lemon zest. Mix well.

Mix on low speed until you have combined the dry ingredients.

Add half your milk. Mix well.

Add in remaining ingredients, alternating dry, wet, and dry. Do not overmix.

Fold blueberries gently into the batter using a spatula or spoon, not breaking any berries.

Fill the cupcake liners two-thirds full with batter.

Bake for 17-20 minutes until a toothpick inserted into the center comes clean.

Allow cupcakes to cool for 5 minutes in the pan, and then transfer them onto a wire rack.

For the Lemon Cream cheese Frosting

16 ounces cream cheese, softened
8 ounces of unsalted butter at room temperature
2 pounds of confectioners sugar
One teaspoon of vanilla extract
One organic lemon juice and zest

Mix the cream cheese and butter in a stand mixer with the paddle attachment.

Mix vanilla, lemon juice, and zest.

Add confectioners’ sugar gradually until combined. Scrape the sides of your bowl. Whip until smooth.
